Carrollwood cooks in the Spanish spirit she carried — tapas and small plates meant to be passed, shared, and lingered over. Croquetas and gambas al ajillo, provoleta off the fire, a table that fills slowly and empties late. Not a course you finish, but a meal you settle into.
